Coffee FAQ's

DO YOU OFFER DARK, LIGHT, OR MEDIUM ROAST?

Our roasters roast our coffees to the level we feel highlights the particular beans' qualities. Many of our single origins have a lighter to medium roast and our espressos tend to be on the darker end of the spectrum. Many of our blends have a medium roast profile.

HOW LONG DOES COFFEE STAY FRESH AND HOW SHOULD I STORE IT?

Roasted coffee is a fresh food and should be treated that way. We like to drink it within two weeks of roasting. We focus on freshness and immediate consumption for coffee that is the most alive, vital, and delicious. We believe the health benefits, antioxidants and overall taste are best when consumed closest to the roasted on date. Coffee is a living thing, but after roasting it releases its CO2 which is its lifeblood within two weeks it is gone. Waiting longer to drink it will result in an inferior product. Lifeless, dull, and stale.

The bags we ship our coffee in are great at keeping light, moisture, and air out of your coffee. Our bags are equipped with one way valves that let the Co2 escape without letting oxygen in. Once you open that package it will start oxidizing and losing freshness at a rapid pace. If you wanted old stale coffee you would have purchased it from a store shelf. Since you want to experience the fresh benefits and complex flavors of freshly roasted coffee we urge you to consume it within two weeks from its roast date.

We recommend ordering your beans whole and grinding them at home just before brewing. This helps retain the beans' freshness longer. Of course we are happy to grind your coffee for you if that is your preference.

Store your coffee in a cool, dry place, keep it away from heat sources and light when possible. Keep it in its original package or transfer into an airtight container.

Refrigerators and freezers have moisture and it is not our preference to store coffee in either one. Flavor losses will accelerate even in the freezer.

ARE YOUR COFFEES CERTIFIED ORGANIC AND FAIR TRADE CERTIFIED?

Our coffee buyers place a premium on sustainability and quality. We only purchase specialty grade 100% Arabica bean coffee. Specialty coffees need to achieve a cupping score over 80 points on a scale of 0 to 100. Only 5% of the world's crop qualifies for this distinction. We purchase a number of organic  and Fair Trade coffees. Many producers decide it is in their best interest to channel their resources to other areas of sustainability or improvements on their farms instead of the expensive process of certifications. Fair Trade or organic does not necessarily mean higher quality or higher pay to the farmers or workers. We choose to build relationships with our producers and evaluate each one to a high standard regardless of certification status. We strive to be open, fair, and inclusive in every decision we make.

WHAT BREW METHODS DO WE RECOMMEND?

We have many different coffees we offer and personal preference in brew methods will often determine which brewing method you choose. Please remember water to coffee ratio as well as water quality play a huge part in the coffee you prepare.

You may reference our brewing guide or one of the many articles on brewing methods from sources you trust.

ARABICA VS. ROBUSTA COFFEE BEANS

We use only 100% Arabica beans for roasting. Arabica and Robusta are the two most commonly cultivated coffee beans in the world. Arabica is of higher quality than Robusta due to its more complex flavor profile and lower caffeine content. Arabica coffee is grown in cooler climates and higher altitudes which helps to develop their flavor. Arabica coffee has a more delicate, nuanced flavor with notes of fruit, chocolate, nuts, and caramel.

Robusta coffee, on the other hand, is grown at lower altitudes and in warmer climates. It has a stronger and harsher taste. Robusta is often used as a cheaper alternative in big name commercial coffee.

WHAT IS THE DIFFERENCE BETWEEN A SINGLE ORIGIN COFFEE AND A BLEND COFFEE?

Single-origin coffees are sourced from a specific location, whether estates, family owned farms, or communities served by farmer cooperatives. Blends showcase coffees from different areas that we blend with great expertise and intention so the beans can work together to highlight and round out a distinct flavor.

WHAT IS A MICRO-LOT COFFEE?

Micro-lot coffees are small batches of the highest quality coffee from a specific area of a farm or plot of land. The coffee exhibits unique characteristics in quality and flavor. The coffee is kept separate from the rest of the harvest so that it can be sold and traceable by the coffee roasters looking for the particular coffee lot.

DO YOU SELL FLAVORED COFFEE?

We do sell some flavored coffee such as pumpkin spice that we flavor with actual fresh whole food spices. We do not use the chemical oils many coffee roasters use for coffee flavoring. The usual practice is to use inferior coffee beans and add the chemical oils to the beans after roasting. We have chosen not to use this method. We also sell some flavoring spice mixes which are sugar free and you can add to your coffee grounds before brewing or directly to your cup of coffee. This method allows you to use real spices and to control the amount of flavor that fits your personal preference. We also sell delicious gourmet coffee sugars that have real spices added to flavor your coffee right in your cup for those who prefer to sweeten their coffee.

WHAT IS SMALL BATCH COFFEE?

We roast your coffee in small batches of 50 lbs or less. This enables more accurate roasting and more control of the roasting process. We only roast the coffee that has been ordered so we have much less waste. The small batches ensure we only send out fresh coffee to our customers.
